Mango cupcakes

I have had a few requests for my mango cupcake recipe.  I originally found it on the Holy Cow website.  I adapted it a bit as I use ‘real’ butter instead of the recommended vegan butter and don’t use vegetable shortening.

Here is my version

Sift together
1 1/2 cups plain flour
2 tsp baking powder
1 tsp cardamom

Beat together
1 1/2 cups mango puree
1/2 cup sunflower oil
2/3 cup sugar
1 tsp vanilla

Add the wet ingredients into the dry and mix until smooth.  Don’t overmix, just make sure the ingredients are incorporated.  Spoon into cupcake or muffin cases.  Bake at 180c until golden and springy.  For cupcakes this will take about 15 mins, for muffins it will take about 25 mins.

For mango topping
1/4 cup mango puree
3 1/2 oz soft butter
2 cups icing sugar
1tsp vanilla

Beat all ingredients together until smooth and spread over cooled cupcakes.

These truly are the easiest tastiest, most scrumptious cupcakes ever!!  Sorry, no photos, we ate them all!
